莜面卷

我从小就喜欢吃莜面卷,妈妈爱吃,姥姥也爱吃。姥姥是西北人,有一手搓莜面卷的好功夫,而且她还有一件宝物——搓面石,这可是姥姥的姥姥傳下来的,用它搓出来的莜面卷分外香甜,让人回味无穷。

小时候,每次全家一起吃莜面卷,我都非常开心。大家聊着天,在热气腾腾的笼屉里夹起面卷,蘸足沙葱羊肉卤后放到嘴里,吃得满嘴流油。忙活了半天的姥姥看着我们,笑眯眯地说:“一家人在一起,多温暖。”虽然那时的我无法完全理解“温暖”的含义,但总喜欢看着姥姥搓莜面卷。

搓莜面卷是姥姥的绝活儿,谁都学不来。她先把滚烫的开水浇在莜面粉上,然后用手快速和成一个面团。搓莜面卷也要趁热,这样好成型,不易断。姥姥把莜面团先滚成一根拇指粗细的条,然后左手拿着条,右手揪下一块面,放到搓面石上,右手手掌一按一撮,一条小“长龙”便出现了。再用食指和中指夹住“小长龙”的末端,一提一绕,一个漂亮的莜面卷诞生!我在一旁不停地鼓掌惊叹,好像在观赏一次艺术创作!我跃跃欲试,也闹着要搓一个,姥姥微笑着用烫得红彤彤的手拉着我,轻声说:“莫烫着俺娃,等俺娃长大了,姥姥再教哟。”我使劲儿点点头,看着笑眯眯的姥姥。留有余温的面卷光溜溜的,每一个都那么温暖。
